You can also use any other meat you like for this casserole. To serve, allow the chicken and potato casserole to rest for a few minutes post-bake, then garnish with fresh parsley or chives. Plate alongside a crisp green salad or steamed seasonal vegetables for a wholesome, family-friendly meal.
Ingredients:
- 800 g boiled potatoes
- 500 g chicken fillet
- 400 g zucchini
- 200 g grated fermented cheese
- 200 g grained cottage cheese
- 150 g carrots
- 120 g onions
- 2 eggs
- 3 cloves garlic
- 2 teaspoons salt-free chicken seasoning
- salt, pepper, to taste
- oil for frying and greasing the pan
- handful of parsley
Directions:
- Wash the potatoes well and boil them with their skins on.
- Peel the boiled and cooled potatoes and cut them into thin slices.
- For the filling, grate the carrots, dice the zucchini and onions, and chop the garlic.
- Cut the chicken fillet into small pieces.
- Heat a frying pan with a drizzle of oil, add the vegetables and chicken. Add the spices and fry, stirring constantly, until the vegetables and meat are cooked.
- Grate the cheese, add the coarsely chopped cottage cheese, beat the eggs, add the chopped parsley and mix.
- Grease the baking dish with oil, line the bottom with a third of the boiled potato slices, place half of the fried vegetables and meat filling on them, and add less than half of the cheese mixture on top, place another third of the potato slices, add the vegetables and meat mixture, add the remaining potatoes again and cover the top with the remaining cheese mixture.
- Bake the casserole in an oven preheated to 200 °C for about 30 minutes.
