Shiitake Mushrooms – Tasty and Nutritious

Shiitake mushrooms are one of the most popular ingredients in Asian cuisine and are becoming increasingly common in our own cooking as well. These dark brown mushrooms with meaty caps have an intense, slightly smoky flavor and an umami aroma that gives dishes depth and character.

Recipes with shiitake mushrooms are very diverse—from light soups to more substantial dishes with meat or noodles. These mushrooms are not only delicious but also nutritious, as they are rich in vitamins, minerals, and antioxidants.

Asian Soup with Shiitake Mushrooms: Recipe

Ingredients:

  • 200 g fresh shiitake mushrooms
  • 1 leek (white and light green parts only)
  • 150 g chicken breast
  • 1 liter chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp grated ginger
  • 2 cloves of garlic
  • Chinese cabbage (pak choi) – a few leaves
  • A few drops of sesame oil
  • Salt and pepper to taste

Preparation:

  1. Slice the chicken breast into thin strips, the shiitake mushrooms into slices, and the leek into rings about 2 cm wide. Heat a tablespoon of oil in a pot and sauté the ginger and garlic for about one minute. Add the chicken pieces and cook until lightly browned.
  2. Pour in the broth and bring to a boil. Reduce the heat, add the shiitake mushrooms and leek, and simmer for 10–12 minutes.
  3. Add the soy sauce and cabbage leaves, then cook for another 2–3 minutes. Just before serving, drizzle in the sesame oil.
