This creamy pasta dish combines the earthy flavor of shiitake mushrooms with a rich, cheesy sauce for a simple yet indulgent meal. Perfect for a cozy dinner, it brings together Italian elegance and a hint of Asian-inspired umami.

Ingredients:

  • 300 g pasta (nests or any other shape)
  • 250 g shiitake mushrooms
  • 200 ml heavy cream
  • 100 ml milk
  • 1 onion
  • 2 cloves of garlic
  • 50 g Parmesan cheese
  • Olive oil
  • Fresh herbs (thyme or parsley)
  • Salt and pepper

Preparation:

  1. Slice the shiitake mushrooms and finely dice the onion. Cook the pasta according to the package instructions, drain, but reserve a little of the cooking water.
  2. Heat olive oil in a pan, sauté the onion until soft and lightly golden, then add the garlic and cook for another minute.
  3. Add the shiitake mushrooms and cook over medium heat for 5–7 minutes, until the mushrooms soften and release their juices.
  4. Pour in the cream and milk and simmer for 3–4 minutes. Add the grated Parmesan and mix well. If the sauce is too thick, add a little of the reserved pasta cooking water.
  5. Season with salt and pepper. Toss the sauce with the pasta, garnish with fresh herbs, and sprinkle with extra grated Parmesan before serving.
