Spaghetti with Tomatoes and Zucchini – Recipe
Spaghetti with zucchini and cherry tomatoes is a healthy, nutritious, and very tasty choice for lunch or dinner. Fresh herbs and grated cheese complement the dish, adding extra flavor.
Ingredients (serves 4)
- 400 g spaghetti
- 2 medium zucchinis
- 300 g cherry tomatoes
- 3–4 cloves garlic
- 4–5 tbsp olive oil
- Fresh parsley or basil leaves
- Grated Parmesan or another hard cheese
- Salt and pepper to taste
- Chili flakes (optional)

Instructions
- Wash the zucchinis and slice them into thin rounds. Cut the cherry tomatoes in half. Finely chop the garlic or crush it using a garlic press.
- Bring a large pot of salted water to a boil and cook the spaghetti according to the instructions on the package. The pasta should be al dente—slightly firm in the center. Before draining, reserve one cup of the pasta cooking water for the sauce.
- Meanwhile, heat the olive oil in a large frying pan or deep skillet. Sauté the chopped garlic for about 30–40 seconds until fragrant (do not overcook, as it may become bitter). Add the zucchini slices and cook over medium heat for 4–5 minutes, stirring occasionally, until they soften slightly and begin to brown.
- Add the halved cherry tomatoes and cook for another 3–4 minutes until they soften and start releasing their juices. If the dish seems too dry, add a little of the reserved pasta cooking water. Season with salt, pepper, and chili flakes if you prefer a spicier flavor.
- Once the spaghetti is drained, immediately add it to the pan with the vegetables. Mix well so the sauce coats the pasta evenly.
- Sprinkle with freshly chopped parsley or basil leaves and generously top with grated Parmesan. If desired, add a pinch of chili flakes and a drizzle of olive oil.
- Serve immediately.
