  • 300–400 g raw tiger prawns (peeled, tails optional)
  • 200 g chanterelles or button mushrooms
  • 2 tbsp Tom Yum paste (typically made from chili and roasted garlic)
  • 2 stalks lemongrass (lightly crushed with the side of a knife)
  • 3 cm galangal root
  • 5 kaffir lime leaves
  • 3 tbsp fish sauce
  • 2–3 tbsp lime juice
  • 1–2 fresh chili peppers (if you prefer extra heat)

Instructions:

  1. Bring the broth to a boil in a pot. Add the lemongrass, sliced galangal, and kaffir lime leaves. Simmer for about 5 minutes until the broth becomes fragrant.
  2. Stir in the Tom Yum paste. This will give the soup its signature red color and spicy depth.
  3. Add the mushrooms and cook for 2–3 minutes. Then add the shrimp. Shrimp cook very quickly (about 2 minutes) — as soon as they turn pink and curl up, remove the soup from the heat to prevent them from becoming rubbery.
  4. Add the fish sauce and lime juice. If needed, add a pinch of sugar to balance the flavors.
  5. Pour into bowls and garnish with chopped fresh chili and coriander leaves.
