Cloud eggs are one of those breakfast dishes that never fail to impress. Their airy, golden appearance makes them look as though they came from a café, yet they require only a handful of simple ingredients and a few extra minutes in the kitchen. Crisp on the outside, light and fluffy on the inside, with a rich, runny yolk in the center, they’re a fun way to elevate an ordinary breakfast or weekend brunch.
Cloud Eggs – Ingredients
For the best results, use fresh, room-temperature eggs. Fresh eggs have firmer whites that whip up more easily and hold their shape better during baking.
Ingredients (Serves 4):
- 4 large eggs (room temperature)
- 40 g (about 1½ oz) hard cheese, finely grated (such as Pecorino or Parmesan)
- 50 g (about 1¾ oz) finely chopped ham or bacon (optional, but adds extra flavor and richness)
- A pinch of salt
- Freshly ground black pepper
- Fresh herbs, such as dill, chives, parsley, or microgreens
- A few drops of lemon juice (helps keep the egg whites bright and fluffy)

How to Make
- Prepare the oven. Preheat your oven to 220°C (425°F). Line a baking tray with parchment paper. If desired, lightly grease the paper with butter or cooking spray to help prevent sticking. Make sure the oven is fully preheated so the egg whites set quickly and maintain their shape.
- Separate the eggs. Carefully separate the egg whites from the yolks. Place the whites into a large, completely clean mixing bowl. Keep each yolk in half of its shell or in a small bowl. Be careful not to let any yolk get into the whites, as even a tiny amount of fat can prevent them from whipping properly.
- Whip the egg whites. Add a pinch of salt and a few drops of lemon juice to the egg whites. Using an electric mixer, beat on high speed until stiff, glossy peaks form. The mixture should stay firmly in place if you carefully turn the bowl upside down. Gently fold in the grated cheese and chopped ham or bacon, taking care not to deflate the whipped whites.
- Bake the clouds. Spoon the whipped egg whites onto the prepared baking tray, creating four large mounds. Use the back of a spoon to make a small well in the center of each mound. Bake for 3–4 minutes, or until the whites become set and the tips begin to turn lightly golden.
- Add the yolks. Remove the tray from the oven and carefully place one egg yolk into the center of each cloud. Season with freshly ground black pepper and return to the oven for another 2–3 minutes. The yolks should be just warmed through and lightly coated on the outside while remaining deliciously runny in the center.
Serving Suggestions
Serve cloud eggs immediately while they’re still warm and fluffy. They pair beautifully with toasted sourdough, ciabatta, or whole-grain bread, especially when spread with mashed avocado or butter.
For a balanced meal, add a simple green salad, sliced tomatoes, sautéed mushrooms, or roasted asparagus. A sprinkle of fresh herbs and an extra shaving of Parmesan also make an excellent finishing touch.
