Creamy Pumpkin Pasta

Ingredients (for 4 servings):

  • 400 g penne or other pasta of your choice
  • 500 g pumpkin (peeled and cut into cubes)
  • 2 cloves of garlic
  • 1 onion
  • 200 ml vegetable or chicken broth
  • 100 ml cream (or plant-based milk)
  • 50 g Parmesan cheese
  • 2 tbsp olive oil
  • Fresh sage leaves
  • Salt, pepper, nutmeg

Preparation:

  1. Steam or roast the pumpkin cubes in the oven at 180 °C for 20–25 minutes, until soft. Meanwhile, cook the pasta according to package instructions.
  2. In a pan, sauté the chopped onion and garlic in olive oil until fragrant.
  3. Blend the cooked pumpkin, onion, garlic, broth, and cream until smooth.
  4. Pour the sauce into a pot, stir in the grated Parmesan, and season with salt, pepper, and nutmeg.
  5. Combine the cooked pasta with the sauce.
  6. Serve topped with extra Parmesan and crispy sage leaves.
