Meat rolls with mushrooms are an elegant and delicious dish that will beautifully complement any festive table, especially Christmas or New Year’s dinner. These rolls are perfect when you want to prepare something special that delights not only with its flavor but also with its appearance. They can be made using different types of meat—pork, chicken, or turkey—and thanks to the mushroom filling, the rolls become more tender and aromatic.
Meat Rolls with Mushrooms
Ingredients:
For the rolls:
- 600–700 g pork, turkey, or chicken fillet
- Salt and pepper to taste
- 2 tbsp vegetable oil for frying
For the mushroom filling:
- 300 g button mushrooms or other mushrooms of your choice
- 1 medium onion
- 2 cloves of garlic
- 2 tbsp vegetable oil or butter
- Salt and pepper to taste
- Fresh parsley or dill (optional)
Preparation:
- First, prepare the mushroom filling. Finely chop the mushrooms, onion, and garlic. Heat the oil or butter in a pan and sauté the onion until soft. Add the mushrooms and cook over medium heat until the liquid evaporates and the mushrooms lightly brown. At the end, add the garlic, salt, pepper, and finely chopped fresh herbs. Mix well and remove from heat.
- Cut the meat into thin slices (about 0.5–1 cm thick) and lightly pound them with a meat mallet. Season each slice with salt and pepper on both sides.
- Place 1–2 tablespoons of mushroom filling on each piece of meat and roll it up. You can tie the rolls with kitchen twine or secure them with toothpicks so they keep their shape while cooking.
- Heat oil in a pan and fry the rolls on all sides until they develop a nice golden color. Then you can finish cooking them in the oven at 180 °C (356 °F) for about 15–20 minutes (if using pork) or 12–15 minutes (if using chicken or turkey), until the meat is fully cooked but remains juicy.

Tips and Serving Suggestions
Tip: If you want the rolls to be even juicier and more tender, after browning them in the pan, continue simmering them in a sauce—add a little cream, water, and tomato paste, cover with a lid, and simmer for another 20–30 minutes.
Serving suggestion: Serve the mushroom rolls hot, garnished with fresh herbs. This dish pairs perfectly with mashed potatoes, boiled rice, or a fresh vegetable salad.
