Shiitake Mushrooms with Beef in Honey–Soy Sauce: Recipe

This hearty and aromatic dish makes a perfect addition to a table of rice or noodles.

Ingredients:

  • 400 g beef (lean cut)
  • 200 g shiitake mushrooms
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 garlic cloves
  • 1 tsp grated ginger
  • Green onions
  • Sesame seeds
  • Oil for frying
  • Cornstarch (optional)

Instructions:

  1. Slice the beef into thin strips, the shiitake mushrooms into slices, and the green onions diagonally.
  2. In a bowl, mix the soy sauce, honey, vinegar, crushed garlic, and ginger – this will be your sauce.
  3. If you prefer crispier meat, lightly coat the beef in cornstarch.
  4. Heat oil in a wok or deep frying pan over very high heat. Add the beef and cook for 2–3 minutes, stirring quickly, until browned. Remove to a plate.
  5. In the same pan, sauté the shiitake mushrooms for 3–4 minutes. Return the beef to the pan, pour in the prepared sauce, and mix well. Cook for another 2–3 minutes, until the sauce slightly thickens and coats the meat and mushrooms.
  6. Add the chopped green onions and cook for another 30 seconds.
  7. Serve on a plate and sprinkle with sesame seeds. This dish tastes best with white rice or Asian-style noodles. The combination of honey and soy creates a wonderful sweet-and-sour flavor, while the shiitake mushrooms add depth to the dish.

Shiitake mushrooms invite experimentation with flavors and textures. Just be careful not to overcook them so they retain their meaty texture and intense flavor. Enjoy your meal!
