Chicken Pasta Bake with Creamy Cheese Sauce: Ingredients
- 300 g (10½ oz) short pasta (penne, fusilli, farfalle, or another favorite shape)
- 500 g (1.1 lb) boneless, skinless chicken breast or chicken thighs
- 2 tablespoons (28 g) butter
- 2 tablespoons (16 g) all-purpose flour
- 500 ml (2 cups) whole or 2% milk
- 200 g (7 oz / about 2 cups shredded) cheese, such as Cheddar, mozzarella, Gouda, or another good melting cheese (use half for the sauce and half for the topping)
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon (15 ml) cooking oil
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon dried oregano
- A pinch of ground nutmeg
- Fresh parsley or dill, chopped, for garnish

Chicken Pasta Bake with Creamy Cheese Sauce: Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain and set aside.
- While the pasta cooks, cut the chicken into bite-sized pieces. Heat the oil in a large skillet over medium-high heat and cook the chicken until golden brown and fully cooked. Transfer to a plate and set aside.
- Using the same skillet (adding a little more oil if needed), sauté the chopped onion until softened and translucent. Add the minced garlic and cook for another minute until fragrant.
- Add the butter to the skillet and let it melt. Stir in the flour and cook, stirring constantly, for about 1 minute to make a roux. Gradually whisk in the milk, stirring continuously to prevent lumps. Cook over medium heat until the sauce thickens.
- Once the sauce has thickened, stir in half of the grated cheese (100 g / 3½ oz), the salt, pepper, oregano, and a pinch of nutmeg. Continue stirring until the cheese has completely melted and the sauce is smooth and creamy. Remove from the heat.
- In a large mixing bowl, combine the cooked pasta, chicken, sautéed onion and garlic, and the cheese sauce. Stir until everything is evenly coated.
- Lightly grease a 20 × 30 cm (8 × 12 inch) baking dish. Transfer the pasta mixture to the dish and spread it evenly. Sprinkle the remaining cheese generously over the top.
- Bake in a 190°C (375°F) preheated oven for 20–25 minutes, or until the cheese is melted, bubbly, and beautifully golden brown.
Tips for the Perfect Dish
- Choose the right pasta. Short pasta shapes with ridges or grooves, such as penne or fusilli, hold onto the sauce much better than smooth varieties.
- Add extra vegetables. Broccoli florets, diced bell peppers, spinach, mushrooms, or zucchini all make excellent additions.
- Finish with fresh herbs. Sprinkle freshly chopped parsley or basil over the baked pasta just before serving to add brightness and fresh flavor.
