Ingredients for the Cottage Cheese Filling (Serves 4–6):

  • 400 g cottage cheese (5–9% fat)
  • 150 g mascarpone or cream cheese
  • 2 eggs
  • 3–4 garlic cloves, minced
  • Salt, white pepper, and ground nutmeg, to taste
  • A handful of basil (fresh or dried)

For the Spinach and Tomato Sauce:

  • 300 g spinach (fresh or frozen)
  • 400 g canned chopped tomatoes
  • 1 onion, finely chopped
  • 2 tbsp olive oil
  • 1 tsp tomato paste
  • Salt, black pepper, and dried oregano, to taste

For Assembly:

  • 200–250 g lasagna sheets
  • 150 g grated semi-hard cheese or mozzarella
  • 40 g grated Parmesan cheese (for topping)

Spicy Cottage Cheese Lasagna with Spinach – Instructions

  1. Heat the olive oil in a large pan and sauté the chopped onion until softened. Stir in the tomato paste, then add the canned tomatoes and season with salt, pepper, and oregano. Simmer for about 15 minutes. Meanwhile, briefly cook the spinach. If using frozen spinach, thaw it completely and squeeze out as much liquid as possible before adding it to the tomato sauce.
  2. In a large bowl, combine the cottage cheese, mascarpone, eggs, garlic, basil, salt, white pepper, and a pinch of nutmeg. Mix until smooth and creamy.
  3. Lightly butter a baking dish. Spread a thin layer of the tomato and spinach sauce over the bottom, then arrange the first layer of lasagna sheets.
  4. Spread half of the cottage cheese mixture over the pasta, followed by a layer of the tomato-spinach sauce. Sprinkle with some grated cheese. Repeat the layers (lasagna sheets, cottage cheese filling, tomato sauce, cheese) until all the ingredients are used.
  5. Cover the final layer of pasta generously with the remaining tomato sauce. Sprinkle with the remaining grated cheese and finish with the Parmesan.
  6. Bake in a preheated oven at 180°C (350°F) for 35–45 minutes, or until the top is golden brown and the lasagna is bubbling. Remove from the oven and let it rest for 10–15 minutes before slicing and serving.
